Crafting Award-Winning Olive Oil: From Our Family's Ancient Groves to Your Table


For generations, our family’s olive estate—nestled in the pristine mountains of Rameh, a hidden beauty of northern Israel—has preserved time-honored traditions.

 

This sacred terrain has produced the Mediterranean's most coveted olive oils, due to its optimal climate and topography. A privileged area where nature has created a rare combination of sunshine and stony ground, the ideal environment for the mythical olive tree to thrive in.

In Rameh, people continue to take pride in their olive oil’s reputation, which extends throughout the Levant, it’s mentioned in the Old Testament, in newspaper articles, books and even poems, the olives are described as “the best you ever laid eyes on,” and the village itself as “the queen of Palestinian oil”.

Today the Khalaf Olives estate follows this tradition as a family run olive and olive oil estate. We produce only premium olive oil using traditional methods combined with modern technology.

Being a boutique olive oil producer, we grow, harvest and press solely our own olives and do not mix different varieties from other regions. Hence, we can define our product as “Pure Terroir” or “single estate olive oil”, which has a distinctive flavor and exquisiteness on the palate.



A Century of Heritage, A Lifetime of Flavor

1850’s

Our story begins in the 1850s, when our ancestor Khalaf Khalaf journeyed from Lebanon to the village of Rameh. There, he married Helwi, and together they had four children. The youngest of these was Khalil, born in 1872.

1902

Seeking to avoid conscription into the Ottoman army and in search of a better life, Khalil left Rameh for the United States. He began his new life working in coal mines, gradually saving enough to start his own business in New York State.

1924

After more than two decades in America, Khalil still longed for home. He returned to Rameh with the savings he had accumulated, ready to put down roots once more.

1927

Khalil married Hanneh Khalaf, and they built the first stone house in the village—a home our family still cherishes today. They made their living from the surrounding olive orchards and raised six children together.

1944

Khalil passed away in 1944, leaving Hanneh and their six children behind. Their eldest son, Khalaf, was just 15 years old. Khalil’s parting wish was for his children to continue harvesting and caring for the olive trees—an enduring legacy we hold close to this day.

Our First Stone Mill 1990

Driven by their father’s wish to preserve the olive heritage, Khalaf and Musa purchased additional olive groves. They came across an old olive press and decided to buy it for the family’s personal use, continuing the tradition of producing olive oil by hand.

A New Modern Mill 2015

As time went on, we recognized the need to improve both the quality and cleanliness of our production. In 2015, we invested in a modern, closed-cycle press. This advanced system prevents residue build-up, minimizes exposure to oxygen, and ensures that every drop of oil we produce meets the highest standards of freshness and purity.

Sisters Basma and Maria – armed with years of tech experience – carry forward the legacy, blending innovation with tradition as the family tend to 50 acres of ancient Souri olive trees.

Each year, after the first rain, we come together—alongside our dedicated local team—to celebrate the harvest. It’s not just work; it’s a gathering that honors our history and our land.
